  • 1 cup fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 1 small onion, diced
  • 1/2 cup milk
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 cup cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat and sauté onions and mushrooms until tender.
  3. Add spinach and cook until wilted.
  4. Whisk together eggs, milk, salt, and pepper in a bowl.
  5. Pour the egg mixture into the skillet and stir gently to combine with the vegetables.
