  • 1/2 cup coconut sugar
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 2 tablespoons matcha powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine almond flour, coconut sugar, matcha powder, baking soda, and salt in a mixing bowl.
  3. Mix the melted coconut oil, maple syrup, and vanilla extract in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir until combined.
  5. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes until the edges are set.
  7. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes
