A quick and flavorful Sheet Pan Cashew Chicken meal that’s perfect for busy nights, featuring chicken, fresh vegetables, and crunchy cashews all in one pan.

  • 1 pound chicken thighs, boneless and skinless
  • 1 cup cashews
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 cup carrots, sliced
  • 4 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix together the soy sauce, honey, olive oil, rice vinegar, garlic, and ginger in a bowl.
  3. Toss the chicken thighs in a separate bowl with the sauce until they are fully coated.
  4. Arrange the chicken, broccoli, red bell pepper, carrots, and cashews on a sheet pan.
  5. Drizzle any remaining sauce over the chicken and vegetables.
  6. Season everything with salt and pepper to taste.
  7. Bake in the oven for 25-30 minutes until the chicken is cooked through and the vegetables are tender.
  8. Serve over cooked rice.

Notes

For best results, do not overcrowd the pan. You can swap vegetables based on preference and marinate the chicken for more flavor.
