Wholesome muffins packed with fruits, vegetables, and spices, perfect for breakfast or a snack.

Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cups grated carrots
  • 1/2 cup grated apple
  • 1/2 cup shredded coconut
  • 1/2 cup raisins or chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix the flours, baking soda, baking powder, cinnamon, salt, and sugars together.
  3. In another bowl, whisk the eggs, then add the oil and vanilla extract, mixing until combined.
  4. Stir the wet ingredients into the dry ingredients until just combined.
  5. Fold in the carrots, apple, coconut, and raisins or nuts if using.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes, until a toothpick inserted into the center comes out clean.
  8. Allow to cool for a few minutes before transferring to a wire rack.

Notes

For added flavor, mix in some nutmeg or ginger along with the cinnamon.
