A popular Thai dessert featuring soft, sweet glutinous rice, creamy coconut milk, and fresh mango.

Ingredients

Scale
  • 1 cup glutinous rice
  • 1 1/2 cups coconut milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 2 ripe mangoes
  • Sesame seeds or mung beans for garnish (optional)

Instructions

  1. Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight.
  2. Drain the rice and steam it in a bamboo or traditional steamer for about 30-40 minutes until tender.
  3. Combine coconut milk, sugar, and salt in a saucepan over medium heat until sugar dissolves, but do not boil. Reserve about 1/4 cup of the coconut mixture for drizzling.
  4. Transfer the cooked rice to a bowl and pour over the remaining coconut milk mixture. Stir gently to combine and let it sit for about 30 minutes.
  5. Peel and slice the mangoes.
  6. Place a portion of the sticky rice on a plate, top with mango slices, and drizzle with the reserved coconut milk. Garnish with sesame seeds or mung beans if desired.

Notes

Make sure to rinse the glutinous rice well to remove excess starch. Soaking the rice overnight gives it a better texture.
