  • 2 tablespoons honey
  • 1 lime (juiced)
  • 1 tablespoon olive oil
  • 1 ripe mango (diced)
  • 1/4 red onion (finely chopped)
  • 1/4 cup cilantro (chopped)
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Mix the honey, lime juice, and olive oil together in a small bowl.
  3. Brush the salmon fillets with the honey lime mixture, and season with salt and pepper.
  4. Grill the salmon for about 5-7 minutes on each side or until cooked through.
  5. Combine the diced mango, red onion, cilantro, and a squeeze of lime for the salsa in another bowl.
  6. Serve the grilled salmon topped with the fresh mango salsa.

Notes

For the best flavor, allow the salmon to marinate in the honey lime mixture for about 30 minutes before grilling. Use fresh mango or substitute with pineapple if out of season.
