Creamy cheesecake bars infused with festive eggnog and spices, perfect for the holiday season.

  • 1 ½ cups gingersnap cookie crumbs
  • ½ cup unsalted butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 cup eggnog
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 325°F (160°C). Grease a 9×9 inch baking pan.
  2. Combine gingersnap cookie crumbs and melted butter in a bowl. Press the mixture into the bottom of the prepared pan to form the crust.
  3. Beat together the cream cheese and sugar in a large mixing bowl until smooth.
  4. Add in eggs, eggnog, vanilla extract, nutmeg, and cinnamon. Mix until well combined.
  5. Pour the cheesecake filling over the crust in the baking pan.
  6. Bake in the preheated oven for 40-45 minutes, or until the center is set.
  7. Remove from the oven and let cool to room temperature, then refrigerate for at least 240 minutes before cutting into squares.
  8. Serve chilled and enjoy your festive treat!

Notes

Use full-fat cream cheese for a richer flavor. Cool completely before refrigerating to avoid condensation.
