Delicious soft and chewy cookies that combine the flavors of cinnamon rolls and sugar cookies, perfect for any occasion.

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon cinnamon
  • 1/2 cup brown sugar
  • 1/2 cup powdered sugar (for icing)
  • 2 tablespoons milk (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the flour, baking powder, baking soda, and salt in a bowl.
  3. Cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract.
  5. Mix in the dry ingredients until just combined.
  6. Mix together the brown sugar and cinnamon in a small bowl for the filling.
  7. Roll out the dough on a floured surface and sprinkle the cinnamon-sugar mixture over the top.
  8. Roll it up tightly and slice into cookies.
  9. Place the slices on a greased baking sheet and bake for 10-12 minutes.
  10. Mix the powdered sugar with milk until smooth for icing and drizzle over the baked cookies.

Notes

For extra flavor, add a pinch of nutmeg. You can also refrigerate the dough for up to 3 days before baking.
