Quick and tasty Breakfast Taquitos filled with eggs, cheese, and sausage, perfect for busy mornings or leisurely weekends.

Ingredients

  • 4 large flour tortillas
  • 4 eggs
  • 1/2 cup shredded cheese
  • 1/2 cup cooked breakfast sausage
  • 1/4 cup diced onions
  • 1/4 cup diced bell peppers
  • Salt and pepper to taste
  • Cooking oil

Instructions

  1. Heat a small amount of cooking oil in a skillet over medium heat.
  2. Add diced onions and bell peppers and sauté until soft.
  3. Whisk the eggs in a bowl and season with salt and pepper.
  4. Pour the eggs into the skillet with the vegetables and scramble until fully cooked.
  5. Lay out a tortilla and add a portion of the egg mixture, followed by sausage and cheese.
  6. Roll the tortilla tightly and place seam-side down in the skillet.
  7. Cook until golden brown on all sides.
  8. Serve hot with salsa or avocado.

Notes
