  • 1 cup unsalted butter
  • 2 cups brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh blueberries
  • Zest of 1 lemon
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Melt the butter in a large bowl and stir in the brown sugar until well combined.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Mix together the flour, baking powder, and salt in another bowl. Gradually add this to the wet ingredients, stirring until just combined.
  5. Fold in the blueberries, lemon zest, and lemon juice gently.
  6. Pour the batter into the prepared pan and spread it evenly.
  7. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  8. Let cool before cutting into squares.
