Grandma’s Zucchini Bread

A moist and flavorful zucchini bread that’s perfect for breakfast or an afternoon snack.

Ingredients

  • 2 cups grated zucchini
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, combine the grated zucchini, sugar, oil, eggs, and vanilla extract. Mix well until it’s smooth and incorporated.
  3. In another bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Fold in the nuts if you’re using them.
  6. Pour the batter into the prepared loaf pan, smoothing the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow to cool for 10 minutes in the pan before transferring to a wire rack to cool completely.

Notes

Store your Zucchini Bread in an airtight container at room temperature for up to 4 days. Freeze for up to 3 months.
