Delicious Zucchini Boat Tacos filled with seasoned meat, beans, and cheese, perfect for a fun family dinner.

Ingredients

  • 2 medium zucchinis
  • 1 cup ground beef or turkey
  • 1 teaspoon taco seasoning
  • 1/2 cup black beans
  • 1/2 cup corn
  • 1/2 cup diced tomatoes
  • 1 cup shredded cheese
  • Sour cream
  • Chopped cilantro
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis in half lengthwise and scoop out the center.
  3. Brown the ground beef or turkey in a skillet over medium heat.
  4. Add taco seasoning, black beans, corn, and diced tomatoes to the meat mixture.
  5. Fill each zucchini boat generously with the meat mixture.
  6. Sprinkle shredded cheese on top of each filled boat.
  7. Bake the zucchini boats for 20-25 minutes until tender.
  8. Serve warm with sour cream and chopped cilantro.

Notes

These boats can be stored in the fridge for up to 3 days. Reheat in the oven or microwave.
