A vibrant and refreshing pasta salad perfect for summer picnics and barbecues, featuring colorful veggies, hearty meats, and creamy mozzarella.

Ingredients

  • 1 lb rotini pasta
  • 3.54 oz pepperoni, quartered
  • 4 oz sliced salami, quartered
  • 1 pint cherry tomatoes, halved
  • 1 cup black olives, drained and halved
  • 1 orange bell pepper, chopped
  • 1 green bell pepper, chopped
  • ½ cup finely diced red onion
  • 2 tablespoons chopped pepperoncini
  • 8 oz fresh mozzarella pearls
  • Homemade Italian dressing (to taste)

Instructions

  1. Prepare the Homemade Italian Dressing by combining herbs, olive oil, and vinegar, then refrigerate.
  2. Cook the rotini pasta in boiling salted water until al dente, about 8-10 minutes, then drain.
  3. Toss the warm pasta with half of the dressing in a mixing bowl.
  4. Add the quartered pepperoni, salami, halved cherry tomatoes, olives, chopped bell peppers, red onion, pepperoncini, and mozzarella pearls.
  5. Chill the salad for at least 30 minutes to meld the flavors.
  6. Final toss with remaining dressing just before serving and garnish with parsley and Parmesan.

Notes

This salad can be made ahead of time and is perfect as a side dish for gatherings.
