A delightful dessert combining rich cheesecake with sweet-tart raspberries and smooth white chocolate, perfect for any occasion.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 8 ounces white chocolate, melted
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat the cream cheese, sugar, and vanilla until smooth.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the melted white chocolate until combined.
  6. Gently fold in the raspberries.
  7. Pour the cheesecake batter over the crust in the pan.
  8. Bake for 50-60 minutes or until set.
  9. Let it cool, then refrigerate for at least 240 minutes before serving.

Notes

Serve chilled with optional garnish of raspberries or drizzled chocolate sauce. Perfect with whipped cream.
