A classic Victoria Sponge Cake, perfect for afternoon tea or special gatherings, featuring layers of fluffy sponge with jam and whipped cream.

  • 200g unsalted butter
  • 200g sugar
  • 4 eggs
  • 200g all-purpose flour
  • 2 tsp baking powder
  • Salt (a pinch)
  • Jam (for filling)
  • Whipped cream (optional)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 180°C (350°F). Grease and flour two 8-inch round cake pans.
  2. Cream together the butter and sugar until light and fluffy.
  3. Add in the eggs, one at a time, mixing well after each addition.
  4. Sift in the flour, baking powder, and salt, then fold gently until combined.
  5. Divide the batter evenly between the prepared pans.
  6. Bake for 20-25 minutes, or until a toothpick comes out clean.
  7. Cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  8. Spread a layer of jam on one cake layer and add whipped cream if desired.
  9. Dust with powdered sugar before serving.

Notes

Serve with fresh berries and tea. Store in an airtight container at room temperature for up to 3 days.
