  • 2 ripe avocados
  • 1 garlic clove (minced)
  • Juice of 1/2 lime
  • 1/2 cup precooked black beans
  • 1/4 cup corn
  • 2 tablespoons diced red onion
  • Olive oil

Instructions

  1. Mash the avocados in a bowl until smooth and creamy, leaving some small chunks for texture.
  2. Stir in the minced garlic, lime juice, salt, pepper, and crushed red pepper until well combined.
  3. Fold in the black beans, corn, diced red onion, and cilantro until evenly mixed.
  4. Heat a non-stick skillet over medium heat and drizzle in olive oil.
  5. Spoon half of the avocado and bean mixture onto one side of a tortilla and fold it over.
  6. Cook the quesadilla for 3-4 minutes on each side until golden brown.
