Delicious vegan cookies featuring the unique flavor of matcha, simple to make and perfect for any occasion.

  • 1 cup all-purpose flour
  • 1/4 cup coconut oil, melted
  • 1/2 cup sugar
  • 2 tablespoons matcha powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup non-dairy milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine 1 cup of all-purpose flour, 2 tablespoons of matcha powder, 1/4 teaspoon of baking soda, and 1/4 teaspoon of salt in a bowl.
  3. Mix together 1/4 cup of melted coconut oil and 1/2 cup of sugar, then add 1/4 cup of non-dairy milk and 1 teaspoon of vanilla extract, blending until smooth.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently.
  5. Scoop portions of dough onto a lined baking sheet, flattening each cookie slightly.
  6. Bake for 10-12 minutes or until the edges are lightly golden.
  7. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For enhanced flavor, consider adding an extra half tablespoon of matcha, or mix in dairy-free chocolate chips or nuts.
