Delicate French macarons with a silky smooth shell and a rich filling, perfect for any occasion.

  • 1 3/4 cups powdered sugar
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • Buttercream or ganache filling (for the filling)

Instructions

  1. Combine dry ingredients: In a bowl, mix the almond flour and powdered sugar until well combined.
  2. Whip the egg whites: In another bowl, whip the egg whites until foamy. Gradually add the granulated sugar, continuing to whip until stiff peaks form.
  3. Fold mixtures: Gently fold the almond mixture into the egg whites until combined.
  4. Pipe the macaron shells: Pipe small circles onto a baking sheet lined with parchment paper.
  5. Let macarons rest: Let the macarons sit for 30 minutes at room temperature to form a skin.
  6. Bake to perfection: Bake in a preheated oven at 300°F (150°C) for about 15-20 minutes.
  7. Cool down completely: Allow the macarons to cool completely before filling them with buttercream or ganache.
  8. Final assembly: Assemble the macarons by matching similar shells and sandwiching them together with your chosen filling.

Store in an airtight container in the refrigerator for up to a week, or freeze for longer storage.
