  • 4 boneless, skinless chicken breasts
  • 1 cup frozen corn
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup cream cheese
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. Arrange the chicken breasts in the slow cooker.
  2. Mix in the frozen corn, diced tomatoes, taco seasoning, salt, and pepper. Stir to combine.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  4. Add the cream cheese and shredded cheese about 30 minutes before serving, stirring until melted.
