A refreshing and healthy Tzatziki Chicken Salad with shredded chicken, creamy yogurt dressing, and crisp cucumbers, perfect for lunch or a picnic.

Ingredients

  • 1 cup cooked chicken, shredded
  • 1 cup cucumber, diced
  • 1/2 cup Greek yogurt
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Combine Greek yogurt, olive oil, garlic, dill, lemon juice, salt, and pepper in a mixing bowl to create the tzatziki dressing.
  2. Add shredded chicken and diced cucumber to the bowl and mix until well coated with the dressing.
  3. Serve chilled.

Notes

For added crunch, mix in diced bell peppers or red onions. Use rotisserie chicken for quicker prep. Chill for at least 30 minutes before serving to allow flavors to meld.
