A simple yet elegantly flavorful dish that celebrates the vibrant ingredients of Tuscany.

Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Parsley for garnish

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Season the salmon fillets generously with salt and pepper and sear in the skillet for about 6 minutes on each side.
  3. Melt the butter in the same skillet once the salmon is removed.
  4. Sauté the minced garlic in the melted butter until fragrant.
  5. Add the halved cherry tomatoes to the skillet and cook until they start to soften.
  6. Incorporate the baby spinach and let it wilt.
  7. Finish by squeezing fresh lemon juice over the mixture and returning the salmon to the skillet, garnishing with parsley.

Notes

For crispier skin, pat salmon dry before seasoning. Customize with your choice of vegetables.
