  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1/2 cup unsalted butter, cubed
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest

Instructions

  1. Whisk the juice and sugar with eggs in a saucepan until smooth.
  2. Heat the mixture over medium heat and incorporate the cubed butter, stirring continuously.
  3. Add the lemon juice and lemon zest after removing from heat.
  4. Strain the curd through a fine-mesh sieve into a bowl for a silky texture.
