Tiramisu Cookies combine the rich flavors of traditional tiramisu with the convenience of a cookie, perfect for coffee lovers.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup espresso or strong brewed coffee, cooled
  • 1 cup mascarpone cheese
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then add the vanilla extract.
  4. Whisk together the flour, cocoa powder, baking powder, and salt in a separate bowl. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Stir in the cooled espresso until the mixture is smooth.
  6. Fold in the mascarpone cheese until evenly distributed.
  7. Drop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes until the edges are set but the centers are soft.
  9. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  10. Dust with powdered sugar before serving.

Notes

Store Tiramisu Cookies in an airtight container at room temperature for up to a week. For longer storage, you can freeze them. Consider soaking the cookies lightly in espresso for more flavor.
