Delightful cookies inspired by the classic Italian tiramisu dessert, combining espresso and mascarpone flavors.

  • 1 cup butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup espresso, cooled
  • 1 cup mascarpone cheese
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, followed by the vanilla extract.
  4. Whisk together the flour, cocoa powder, baking powder, and salt.
  5. Combine the dry ingredients with the wet mixture until just combined.
  6. Incorporate the cooled espresso and mascarpone cheese until well blended.
  7. Form spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes, or until the edges are set.
  9. Cool the cookies for a few minutes before transferring to a wire rack.
  10. Dust with powdered sugar before serving.

Notes

Store any leftover cookies in an airtight container at room temperature for up to 5 days. They can be frozen for up to 2 months.
