Delightful cookies that blend the rich flavors of traditional tiramisu with a chewy texture and crisp edges.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon brewed espresso (cooled)
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together the all-purpose flour, cocoa powder, baking powder, and salt.
  3. Cream the softened butter with the granulated sugar until light and fluffy.
  4. Beat in the egg, cooled espresso, and vanilla extract until combined.
  5. Gradually add the dry mixture into the wet ingredients, mixing until just combined.
  6. Scoop tablespoon-sized portions of dough onto the prepared baking sheet.
  7. Bake for 10-12 minutes, or until the edges are set.
  8. Let them cool on the baking sheet before transferring to wire racks.
  9. Dust the cookies with powdered sugar before serving.

Notes

Store cookies in an airtight container for up to three days, or in the fridge for up to a week. Can be frozen for about a month.
