  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup cocoa powder
  • 1/4 cup espresso powder
  • 1 cup mascarpone cheese
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Creaming together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Whisk together the all-purpose flour, baking powder, salt, cocoa powder, and espresso powder in another bowl.
  5. Add the dry ingredients to the butter mixture, mixing until just combined.
  6. Fold in the mascarpone cheese until deeply incorporated.
  7. Drop tablespoon-sized portions of dough onto ungreased baking sheets.
  8. Bake for 10-12 minutes, until edges are set but centers are soft.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
  10. Dust with powdered sugar before serving.
