Delicious Thai Peanut Chicken Wraps, filled with savory chicken and fresh veggies, drizzled with creamy peanut sauce.

Ingredients

  • 2 chicken breasts, cooked and shredded
  • 4 large tortillas or wraps
  • 1 cup shredded carrots
  • 1 cup sliced bell peppers
  • 1 cup cucumber, sliced
  • 1 cup shredded lettuce
  • 1/2 cup peanut butter
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon minced garlic
  • 1 teaspoon grated ginger
  • Chopped peanuts (for garnish)
  • Fresh cilantro (for garnish)

Instructions

  1. Mix the Peanut Sauce. In a small bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, garlic, and ginger until smooth. Adjust seasoning as needed.
  2. Prepare the Tortilla. Lay out a tortilla on a clean surface. Spread a generous amount of that creamy peanut sauce over the entire surface.
  3. Layer the Goodness. Start adding the shredded chicken, followed by the carrots, bell peppers, cucumber slices, and lettuce.
  4. Add More Sauce. Drizzle a little more peanut sauce over the fillings if desired.
  5. Roll it Up. Fold in the sides of the tortilla and roll it tightly, securing all the fillings.
  6. Slice and Serve. Cut the wrap in half and serve with extra peanut sauce, chopped peanuts, and fresh cilantro.

Notes

Store leftovers in an airtight container for up to 2 days. Best consumed fresh for optimal crunch.
