  • 2 Tbsp coconut aminos
  • 1 tsp sesame oil
  • 1 Tbsp honey
  • ½ tsp garlic powder
  • ½ tsp sea salt
  • ¼ cup plain yogurt
  • 1 tsp hot sauce
  • ½ tsp chipotle powder
  • ½ tsp paprika
  • 1 tsp olive oil
  • 2 cups cooked brown rice
  • ½ cup cooked edamame
  • ½ avocado

Instructions

  1. Prepare the Salmon: Pat the salmon filets dry and carefully cut them into 2-inch cubes.
  2. Whisk the Marinade: In a bowl, mix the coconut aminos, sesame oil, honey, garlic powder, and sea salt together until well combined. Reserve 1 tablespoon of this delicious marinade for later use.
  3. Marinate the Salmon: Toss the salmon cubes into the marinade, ensuring they are well coated, and let them sit for at least 3 minutes to soak in all those fantastic flavors.
  4. Air Fry the Salmon: Preheat your air fryer to 400°F. Place the marinated salmon cubes in the basket in a single layer and air fry for about 7 minutes until they are crispy on the outside.
  5. Mix the Spicy Yogurt Sauce: While the salmon is cooking, combine the plain yogurt with the hot sauce, chipotle powder, and paprika in a separate bowl to create your spicy drizzle.
  6. Assemble the Bowls: Once the salmon is perfect and crispy, it’s time to put it all together! Start by layering the warm brown rice at the bottom of your bowl. Top it generously with the cooked salmon, add some edamame for a protein punch, and finish with sliced avocado. Drizzle the reserved marinade and spicy yogurt sauce on top for an additional layer of flavor.
