A quick and delicious dish featuring tender chicken in teriyaki sauce, served with rice and vibrant vegetables.

  • 2 boneless, skinless chicken breasts
  • 1 cup teriyaki sauce
  • 2 cups cooked rice
  • 1 cup broccoli florets
  • 1 cup sliced bell peppers
  • 1 tablespoon vegetable oil
  • Sesame seeds (for garnish)
  • Green onions (for garnish)

Instructions

  1. Sauté the chicken: In a large skillet, heat the vegetable oil over medium heat. Add the chicken breasts and cook until they are golden brown and cooked through, about 6-7 minutes per side.
  2. Simmer with teriyaki sauce: Pour the teriyaki sauce over the chicken, cover, and let it simmer for about 5 minutes.
  3. Steam the vegetables: While the chicken is cooking, steam the broccoli florets and sliced bell peppers until they are tender yet vibrant, about 3-5 minutes.
  4. Assemble the bowls: Once the chicken is fully cooked, slice it into strips. Serve the sliced chicken over the cooked rice, topping it with the steamed vegetables.
  5. Garnish & drizzle: Drizzle any remaining teriyaki sauce over the top, and finish with a sprinkle of sesame seeds and chopped green onions before serving.

Notes

For added flavor, marinate the chicken in half of the teriyaki sauce for 30 minutes before cooking. Pair with edamame or cucumber salad for an elevated meal.
