  • 34 pound boneless pork loin roast (with a thin layer of fat on top)
  • 1 tablespoon kosher salt
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried crushed rosemary
  • 1 teaspoon ground black pepper
  • 1 tablespoon Worcestershire sauce

Instructions

  1. Preheat the oven to 425°F.
  2. Trim any excess fat from the top of the pork loin, leaving a thin layer.
  3. Coat all sides of the pork loin with Worcestershire sauce.
  4. Mix together salt, paprika, onion powder, garlic powder, rosemary, and black pepper.
  5. Rub the seasoning mixture evenly over all surfaces of the pork loin.
  6. Place the seasoned pork loin fat-side up on a foil-lined baking sheet.
  7. Roast at 425°F for 15 minutes.
  8. Lower the temperature to 375°F and roast for 40-60 minutes until the internal temperature reaches 145°F.
  9. Remove from the oven and tent loosely with foil for 5-10 minutes.
  10. Slice into half-inch thick slices and drizzle with pan juices before serving.

Notes

Make sure to use a meat thermometer for the best results and let the roast rest before slicing to ensure juiciness.
