A delightful fusion of creamy macaroni and zesty taco flavors, topped with melted cheese and fresh garnishes.

  • 8 oz macaroni
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1 cup salsa
  • 1/2 cup sour cream
  • Chopped green onions (for garnish)

Instructions

  1. Bring a pot of salted water to a boil and cook the macaroni according to package instructions until al dente. Once done, drain and set aside.
  2. Add the ground beef over medium heat in a large skillet. Cook until browned, about 5-7 minutes, breaking up the meat as it cooks. Drain excess fat.
  3. Add the taco seasoning and diced tomatoes to the skillet with the beef. Stir together and simmer for about 5 minutes.
  4. Combine the cooked macaroni, the beef mixture, milk, salsa, and sour cream in a large pot. Mix well until everything is evenly incorporated.
  5. Stir in 1 cup of shredded cheddar cheese until completely melted and creamy.
  6. Pour the mixture into a baking dish, spreading it out evenly.
  7. Top with the remaining shredded cheddar cheese and bake in a preheated oven at 350°F (175°C) for 15 minutes or until bubbly and slightly golden.
  8. Sprinkle chopped green onions over the top for a fresh finish. Serve hot and enjoy!

Notes

This recipe is easily customizable with additional ingredients like black beans or bell peppers.
