A delicious and easy meal that combines classic taco flavors with the comfort of a casserole, perfect for busy weeknights.

Ingredients

  • 1 pound ground beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 2 cups tortilla chips
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup sour cream
  • 1 cup diced green onions
  • 1 jalapeño, sliced (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Brown the ground beef over medium heat in a skillet; drain any excess fat.
  3. Stir in black beans, corn, diced tomatoes, and taco seasoning; mix well.
  4. Layer half of the tortilla chips, half of the meat mixture, and half of the cheese in a greased casserole dish.
  5. Repeat layers with the remaining tortilla chips, meat mixture, and cheese.
  6. Bake in preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
  7. Serve hot, topped with sour cream, green onions, and jalapeños if desired.

Notes

For added spice, use spicy taco seasoning or add chopped chilies. You can substitute ground beef with ground turkey or chicken for a lighter version.
