A comforting one-pan meal that combines the bold flavors of tacos with the sweetness of caramelized sweet potatoes, ground beef, and zesty toppings.

Ingredients

  • 1 lb (450g) lean ground beef
  • 2 large sweet potatoes, peeled and diced (about 3 cups / 450g)
  • 1 large onion, diced (about 1.5 cups / 150g)
  • 1 (15 oz / 425g) can black beans, drained and rinsed
  • 1 cup (160g) corn kernels, fresh or frozen
  • 1 packet (approx. 1 oz / 28g) taco seasoning
  • 1/2 cup (120ml) beef broth
  • 1 cup (115g) shredded cheddar cheese
  • Fresh cilantro, chopped (for garnish)
  • Sour cream (for garnish)
  • Lime wedges (for serving, optional)

Instructions

  1. Dice the sweet potatoes into small, even cubes.
  2. Cook the diced sweet potatoes with a splash of water in a skillet over medium-high heat until tender, about 8–10 minutes.
  3. Brown the lean ground beef and diced onion in the skillet, stirring until fully browned, about 5–7 minutes.
  4. Mix in the black beans, corn, taco seasoning, and beef broth, stirring thoroughly.
  5. Simmer the mixture for 5 minutes until thickened.
  6. Add the shredded cheddar cheese on top and cover until melted and bubbly, about 2–3 minutes.
  7. Garnish with fresh cilantro and serve immediately with sour cream and lime wedges if desired.

Notes

This dish is perfect for meal prep and can be stored for up to 3-4 days in the refrigerator or frozen for up to 3 months. Feel free to swap in different veggies or proteins as desired.
