A vibrant and nutritious salad featuring roasted sweet potatoes, black beans, and chickpeas, perfect for meal prep or as a hearty side dish.

  • 2 medium sweet potatoes, diced
  • 1 can black beans, rinsed and drained
  • 1 can chickpeas, rinsed and drained
  • 1 red bell pepper, chopped
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the diced sweet potatoes with olive oil, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for about 25-30 minutes.
  4. Combine the black beans, chickpeas, red bell pepper, red onion, and cilantro in a large bowl.
