This Sweet Potato Beef Bowl combines roasted sweet potatoes, savory ground beef, creamy cottage cheese, with a spicy drizzle of hot honey and ripe avocado.

  • 2 medium sweet potatoes (washed, peeled, and diced into bite-sized cubes)
  • 1 pound ground beef (lean (90% recommended))
  • 1 medium onion (finely chopped)
  • 4 cloves garlic (minced)
  • 1 cup cottage cheese (full-fat recommended)
  • 1/4 cup hot honey (store-bought or homemade with chili flakes)
  • 1 whole avocado (ripe, sliced)
  • 2 tablespoons olive oil (divided)
  • Salt and pepper (to taste)

Instructions

  1. Preheat your oven to 400°F (200°C) to prepare for roasting those sweet potatoes.
  2. Wash, peel, and dice the sweet potatoes into uniform bite-sized cubes.
  3. Toss the sweet potato cubes with 1 tablespoon olive oil, salt, and pepper.
  4. Spread the seasoned sweet potato cubes in a single layer on a parchment-lined baking sheet. Roast for 25 minutes, tossing halfway through.
  5. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes.
  6. Stir in the minced garlic and sauté for 30 seconds until fragrant.
  7. Add the ground beef to the skillet and cook for 5-7 minutes until browned. Season with salt and pepper.
  8. Mix 1/4 cup honey with cayenne pepper or chili flakes to taste for the hot honey.
  9. Assemble the bowl with roasted sweet potatoes as the base, topped with seasoned ground beef and cottage cheese.
  10. Drizzle with hot honey and garnish with sliced avocado.

Notes

Serve warm with a side salad or roasted Brussels sprouts. Store leftovers for up to four days in an airtight container.
