Tender chicken coated in a luscious glaze of sweet pineapple and savory soy sauce, cooked slowly for a tropical escape.

Ingredients

Scale
  • 2 pounds chicken breasts
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 1 tablespoon minced garlic
  • 1 tablespoon ginger (optional)
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Put the chicken breasts in the slow cooker, making sure they fit snugly.
  2. In a bowl, combine pineapple juice, soy sauce, brown sugar, ketchup, minced garlic, and ginger if you’re using it. Whisk it together until it’s smooth and well-blended.
  3. Pour the delicious sauce over the chicken in the slow cooker, ensuring each piece is beautifully coated.
  4. Cover your slow cooker and set it on low for 6-8 hours or high for 3-4 hours. Let the aromas waft through your kitchen as the magic unfolds.
  5. Once the chicken is tender, take two forks and shred the meat right in the slow cooker. Mix it back into that savory sauce for an abundance of flavor.
  6. Taste the chicken and season it with salt and pepper if desired. You want it to be just right!
  7. Spoon out the sweet Hawaiian chicken into bowls or onto plates and garnish with chopped green onions for a fresh bite.
