Delicious sugar-free cookies that satisfy chocolate cravings without the guilt.

Ingredients

  • 1 cup almond flour or coconut flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup sugar substitute (like erythritol or monk fruit)
  • 1/4 cup melted coconut oil or unsalted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • Sugar-free chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine the almond flour (or coconut flour), cocoa powder, sugar substitute, baking powder, and salt in a mixing bowl.
  3. Whisk together the melted coconut oil (or butter), eggs, and vanilla extract in another bowl until smooth.
  4. Pour the wet ingredients into the bowl with the dry ingredients, mixing until just blended.
  5. Fold in sugar-free chocolate chips if desired.
  6. Scoop tablespoons of dough onto the baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are firm.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store leftover cookies in an airtight container at room temperature for up to 5 days or freeze for up to three months.
