Deliciously rich and satisfying, these Sugar Free Chocolate Cookies offer a guilt-free indulgence without sacrificing flavor.

Ingredients

  • 1 cup almond flour or coconut flour
  • 1/2 cup sugar-free sweetener
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup melted coconut oil or butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • Sugar-free chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the almond flour, sugar-free sweetener, cocoa powder, baking powder, and a pinch of salt. Mix well until there are no lumps.
  3. In another bowl, mix together the melted coconut oil (or butter) and vanilla extract until smooth.
  4. Combine the wet and dry ingredients, stirring until a thick dough forms.
  5. If you’re using sugar-free chocolate chips, fold them into the dough gently to incorporate them evenly.
  6. Scoop tablespoon-sized portions of dough onto a lined baking sheet, leaving space between each cookie to allow for spreading.
  7. Using the back of a spoon or your fingers, flatten each mound of dough slightly to create a cookie shape.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges look firm.
  9. Remove from the oven and allow the cookies to cool on the baking sheet for a couple of minutes before transferring them to a wire rack to cool completely.

Notes

Store these cookies in an airtight container for up to one week or freeze for up to three months. For added flavor, consider adding cinnamon or espresso powder.
