Colorful and flavorful stuffed bell peppers filled with ground meat, rice, and zesty tomatoes.

Ingredients

  • 4 bell peppers
  • 1 cup cooked rice
  • 1 pound ground beef or turkey
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. Cook the chopped onion and minced garlic until soft in a skillet.
  4. Add ground beef or turkey to the skillet and cook until browned.
  5. Stir in the cooked rice, diced tomatoes, and Italian seasoning. Season with salt and pepper to taste.
  6. Stuff the mixture into each bell pepper.
  7. Place the stuffed peppers upright in a baking dish.
  8. Sprinkle cheese on top of each pepper, if desired.
  9. Bake in the preheated oven for about 30-35 minutes, or until the peppers are tender.
  10. Serve warm and enjoy!

Notes

Leftover stuffed peppers can be stored in an airtight container in the fridge for up to 3 days. Can be frozen for up to 3 months.
