  • 1 cup grilled chicken, diced
  • 1 cup corn (fresh, canned, or frozen)
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste
  • Feta cheese or cotija cheese (optional)

Instructions

  1. Combine the cooked rice and diced grilled chicken in a large bowl.
  2. Stir in the corn, red bell pepper, red onion, and cilantro.
  3. Squeeze fresh lime juice over the mixture and season with salt and pepper to taste.
