A delightful Strawberry Vanilla Cake layered with whipped cream and fresh strawberries, perfect for any celebration.

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 2 ½ teaspoons baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 2 cups fresh strawberries, chopped
  • 1 cup heavy cream
  • ¼ cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Cream together the softened butter and granulated sugar in a large bowl until light and fluffy.
  3. Add the eggs, one at a time, mixing well after each addition.
  4. Stir in the vanilla extract until blended.
  5. Mix the all-purpose flour, baking powder, and salt in another bowl.
  6. Combine the dry ingredients with the creamed mixture, alternating with milk.
  7. Divide the batter evenly between the prepared cake pans.
  8. Bake in the preheated oven for 25-30 minutes or until a toothpick comes out clean.
  9. Cool the cakes in the pans for 10 minutes before transferring to wire racks to cool completely.
  10. Whip the heavy cream with powdered sugar in a large bowl until soft peaks form.
  11. Fold in the chopped strawberries into the whipped cream.
  12. Assemble the cake by spreading the strawberry filling between the layers and on top of the cake.
  13. Decorate as desired and serve the cake with friends and family.

Store leftovers in an airtight container for up to 3 days or freeze layers for up to 2 months.
