Delightful Strawberry Shortcake Bars with a buttery crumb base and fresh strawberry filling, perfect for summer gatherings.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 teaspoon salt
  • 2 cups fresh strawberries, hulled and sliced
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Combine the all-purpose flour and salt with the butter-sugar mixture to form a crumbly dough.
  4. Press about 2/3 of the dough evenly into the bottom of the prepared baking dish.
  5. Toss sliced strawberries with cornstarch, lemon juice, and vanilla extract to coat.
  6. Spread the strawberry mixture over the crust.
  7. Crumble the remaining dough over the top of the strawberries.
  8. Bake for 30-35 minutes, or until golden brown and bubbly.
  9. Cool in the baking dish before cutting into squares.

Notes

For a richer flavor, consider using brown sugar or adding cinnamon to the dough. Store leftovers in an airtight container at room temperature for up to 3 days.
