A delightful and nostalgic strawberry shortcake made with fresh strawberries, tender biscuits, and whipped cream, perfect for summer gatherings.

Ingredients

Scale
  • 2 cups fresh strawberries, sliced
  • 1/4 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, chilled and cubed
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • Whipped cream for serving

Instructions

  1. Prepare the Sweet Strawberries: In a bowl, combine sliced strawberries and granulated sugar. Allow this lovely mixture to sit for about 30 minutes.
  2. Preheat your oven to 425°F (220°C).
  3. Mix the Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Cut in the Butter: Add the chilled butter to your flour mixture and cut it in until it resembles coarse crumbs.
  5. Combine the Wet Ingredients: Stir in the heavy cream and vanilla extract until just combined to form a dough.
  6. Shape the Dough: Turn your dough onto a floured surface and gently knead it a few times, then pat it down into a 1-inch thick round.
  7. Cut and Bake: Cut the dough into biscuits using a round cutter and place them on a baking sheet. Bake for 15-20 minutes or until golden brown.
  8. Assemble and Serve: Slice the biscuits in half, layer with strawberries and whipped cream. Serve immediately and enjoy.

Notes

Store biscuits and strawberries separately; biscuits are best enjoyed within 2 days.
