Delightful bites blending classic Rice Krispie treats with fresh strawberries and a hint of vanilla, perfect for any occasion.

  • 4 cups Rice Krispies cereal (Standard size, not instant)
  • 10 oz marshmallows (mini or standard)
  • 4 tablespoons unsalted butter (Can use a vegan alternative)
  • 1 cup fresh strawberries, sliced (Be careful when folding in)
  • ¼ cup strawberry puree (Blend fresh strawberries until smooth if not using store-bought)
  • 1 teaspoon vanilla extract

Instructions

  1. Melt the butter and marshmallows in a large saucepan over low heat, stirring continuously until smooth.
  2. Blend in the vanilla extract and strawberry puree until the mixture is smooth.
  3. Combine the Rice Krispies cereal with the melted marshmallow mixture, folding them in gently.
  4. Fold in the sliced fresh strawberries carefully to maintain their shape.
  5. Spread the mixture into a greased 9×13 inch baking pan, pressing it down evenly.
  6. Cool completely at room temperature, then cut into squares or rectangles.

Notes

If the mixture becomes sticky, wet your hands slightly before pressing it into the pan. Adjust the amount of strawberry puree to your taste.
