  • 2 cups sliced rhubarb
  • 1 cup sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter
  • 1 pie crust (store-bought or homemade)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Combine sliced strawberries, rhubarb, sugar, cornstarch, salt, and vanilla extract in a large bowl.
  3. Pour the mixture into the prepared pie crust, and dot with butter.
  4. Cover with a top crust or lattice if desired.
  5. Bake for 15 minutes, then reduce the temperature to 350°F (175°C) and bake for an additional 30-40 minutes, until bubbly and golden brown.
  6. Let cool before serving.
