Delightful Strawberry Lemon Bars with a buttery crust and luscious lemon filling, topped with a vibrant strawberry glaze.

  • 1 cup unsalted butter
  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1 cup granulated sugar
  • 1/2 cup freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 1/2 cup strawberries, pureed
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line an 8×8 inch baking dish.
  2. Brown the butter in a saucepan over medium heat until golden and nutty.
  3. Mix the brown butter with flour, powdered sugar, and salt until well combined. Press into the bottom of the baking dish.
  4. Bake the crust for about 20 minutes until lightly golden.
  5. Prepare the lemon filling by whisking together eggs, granulated sugar, lemon juice, and lemon zest.
  6. Pour the lemon mixture over the baked crust.
  7. Bake for an additional 20-25 minutes until the lemon layer is set.
  8. Make the strawberry glaze by heating the pureed strawberries with cornstarch until it thickens.
  9. Chill the bars in the refrigerator for at least 2 hours, then slice and serve.
