Delicious Strawberry Lemon Bars combining the tartness of lemons with sweet strawberries and rich brown butter.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter (brown butter)
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 cup granulated sugar
  • Zest of 1 lemon
  • 1/4 cup fresh lemon juice
  • 1 tablespoon cornstarch
  • 1/2 cup strawberries (pureed)
  • 1/4 cup water
  • 1/4 cup granulated sugar (for glaze)
  • 1 tablespoon lemon juice (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking dish.
  2. Melt the butter in a skillet over medium heat until it turns brown and smells nutty. Let it cool slightly.
  3. Mix together the flour, powdered sugar, and salt in a bowl. Pour in the brown butter and mix until crumbly. Press the mixture into the prepared baking dish.
  4. Bake for 15-20 minutes until lightly golden.
  5. Whisk together the eggs, granulated sugar, lemon zest, lemon juice, and cornstarch in another bowl. Pour this mixture over the baked crust.
  6. Bake for an additional 20-25 minutes until the filling is set.
  7. Combine pureed strawberries, water, granulated sugar, and lemon juice in a saucepan for the glaze. Heat until thickened.
  8. Pour the strawberry glaze over the cooled lemon bars.
  9. Chill in the refrigerator for at least 120 minutes before slicing into bars.

Notes

Serve chilled, and for extra sweetness, dust with powdered sugar on top. Pair with tea or lemonade.
