These delightful Strawberry Lemon Bars bring together the tang of lemons and the sweetness of strawberries, perfect for any occasion.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, browned
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup fresh strawberries, pureed
  • 1 tablespoon cornstarch
  • 1/2 cup water

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8-inch square baking pan.
  2. Mix together the flour, powdered sugar, and salt. Add browned butter and combine until sandy.
  3. Press the mixture into the bottom of the baking pan. Bake for 15 minutes until lightly golden.
  4. Whisk the eggs, granulated sugar, lemon juice, and zest together until fluffy.
  5. Pour the lemon mixture over the baked crust and return to the oven for 20-25 minutes until set.
  6. Combine pureed strawberries, cornstarch, and water in a saucepan. Boil and stir until thickened.
  7. Spread the strawberry glaze over the cooled lemon bars.
  8. Chill in the refrigerator for at least 1 hour before slicing.

Notes

Serve with vanilla ice cream or whipped cream for an extra treat. Store in an airtight container in the refrigerator for up to 3 days.
