A delightful free-form pastry filled with sweet strawberries and encased in a flaky crust, perfect for any occasion.

Ingredients

  • 1 pound strawberries, hulled and sliced
  • 1 tablespoon sugar (plus more for sprinkling)
  • 1 teaspoon cornstarch
  • 1 teaspoon lemon juice
  • 1 pre-made pie crust or galette dough
  • 1 egg (for egg wash)
  • 1 tablespoon butter, cut into small pieces

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the sliced strawberries, sugar, cornstarch, and lemon juice in a bowl.
  3. Roll out the pie crust on a baking sheet lined with parchment paper.
  4. Spoon the strawberry mixture into the center of the crust, leaving a 2-inch border.
  5. Fold the edges of the crust over the strawberries, pleating as you go.
  6. Brush the edges of the crust with the beaten egg and sprinkle with sugar.
  7. Dot the filling with small pieces of butter.
  8. Bake for 25-30 minutes, or until the crust is golden brown.
  9. Allow the galette to cool slightly before serving.

Notes

Serve with vanilla ice cream or whipped cream for added indulgence. Store leftovers in an airtight container in the refrigerator for up to two days.
