  • 1 cup crushed graham crackers
  • 1/4 cup melted butter
  • 2 cups cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, pureed
  • 1/2 cup whipped cream
  • Fresh strawberries for topping

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Combine crushed graham crackers and melted butter in a bowl.
  3. Press the mixture into the bottom of mini muffin tins to form a crust.
  4. Beat cream cheese, sugar, and vanilla extract in a separate bowl until smooth.
  5. Fold in the pureed strawberries and whipped cream until well combined.
  6. Spoon the cheesecake mixture over the crusts in the muffin tins.
  7. Bake for 15-20 minutes until just set.
  8. Let cool, then refrigerate for at least 2 hours.
  9. Top with fresh strawberries before serving.
